The mash tun is where the milled barley (now known as grist) is mixed with hot water. The idea is that the water extracts all of the soluble sugars from the grist creating a sugary water (wort) which is ideal for fermentation and damp grain (draff) which is ideal as cattle feed [cattle to contirm].

There are several types of mash tun in use and they usually have a domed lid or cover. The joy of the Bruichladdich mash tun is twofold. First, it is uncovered meaning you can watch the whole mashing process take place in all its vaguely steampunk glory. The second is that it is a ‘traditional’ tun with a rotating arm in the middle and takes that mix up the grist and water to ensure efficient extraction.

Elsewhere (Ardnahoe, Ardbeg, Bowmore, Laphroaig) you may see semi-lauter or full lauter mash tuns - introduced from the 1970s - where a series of rotated blades dip into the mash to create even more agitation.

Ever been on a distillery tour? Then you know how much tour guides love to talk about their mills. “It’s over a hundred years old!” “It was ‘liberated’ from a nearby mothballed distillery;” “It’s serviced once a year - one guy does all of them in Scotland;” and “You know, they made them so well, they went out of business…”

But what if you’re building a new urban (and vertical) distillery? Well, you’ll need a shiny new mill. Modern looking. Four rollers. Fed by grain that rises up to the fourth floor and then emptied down to the third floor for mashing. That’s what’s happening here. Gravity (and engineering - a lot of engineering) in action.
